RECIPE: Spaghetti Mushroom Calamari

King oyster mushrooms make a fantastic and healthy plant based substitute for calamari. Instead of preparing your own mushroom calamari from scratch, Nature's Charm have created a ready to use marinated calamari - in a can! This dish is inspired by Gennaro Contaldo's cucina povera calamari and potato recipe from Instagram, but we're using spaghetti instead. Adding the nori sheet gives this an extra seafood flavour kick.
Spaghetti Mushroom Calamari
SERVES 2
INGREDIENTS
150g dried spaghetti
4 tablespoons extra virgin olive oil
425g can Nature's Charm vegan calamari
3 garlic cloves, roughly chopped
1 fresh chilli, roughly chopped
2 tablespoons capers
½ cup diced canned tomatoes or 100g fresh cherry tomatoes, halved
¼ nori sheet
juice of ½ lemon
large handful of parlsey, chopped
salt and pepper to taste
METHOD
Drain the calamari but reserve ½ cup of its marinating liquid.
In a pot of salted boiling water, cook the spaghetti until al dente. Drain but reserve ¼ cup of the cooking water.
In a frypan, heat the oil. Add the garlic and chilli and cook on low until golden, being careful not to brown the garlic. Stir through the capers and then the calamari. Saute for 2 minutes.
Add the tomatoes and simmer for several minutes. Once the tomatoes thicken, crush in the nori sheet. Stir through the lemon juice. Add the reserved ½ cup calamari marinating liquid and continue to simmer for 2 minutes.
Transfer the cooked pasta to the sauce and toss to combine. Pour in the reserved pasta cooking water. Add the parsley and salt and pepper to taste. Cook for another minute.
Garnish with extra parsley.
