EASY RECIPE: Instant Vegan Mozzarella

Why grate, slice, chop and melt mozzarella when you can cut to the chase and have it pre-melted? This is essentially a sauce that mimics the stringiness of melted mozzarella, especially when drizzled over pizza or through pasta bake dishes, like Gnocchi alla Sorrentina.



MAKES 1 CUP | 10 MINUTES


INGREDIENTS


1 cup soy milk

2 tablespoons tapioca starch

¼ cup neutral vegetable oil, like rice bran

2 tablespoons nutritional yeast flakes

1 teaspoon onion powder

½ teaspoon salt


METHOD


In a medium saucepan, over a medium heat, pour in the soy milk and whisk in the tapioca starch until dissolved. Add the remaining ingredients and stir briskly to combine.


Stir often until the sauce becomes thick. When the melted cheese begins to turn stringy and thick, it is ready.


Dollop this sauce on top of pizza or through pasta for a ready-made melted mozzarella.





TOP TIP!


For extra flavour add ½ cup grated vegan cheese to the sauce before it thickens. Also, instead of finding vegan cheese that melts, spread this mozzarella onto toast or smear in between bread for a cheese toasted sandwich.

Hi Marie! Thank you so much for your lovely comment. How wonderful that you are thinking of your vegan customers! They would be very grateful! I don't have a set mozzarella recipe at the moment - but I've seen other recipes that use a combination of blended cream of cashews, coconut oil and vegan yoghurt. Or even soy milk with a setting agent. I wonder if it might be easier to purchase store-bought vegan mozzarella? Can I skip the saucepan step and pour the mix directly on the pizza, and cooks in the oven when baking?

Hi Rob. Interesting idea! I don't think it would work though - as it needs to cook first - in order to turn it into its stringy sauce texture. Without cooking it first, it would be just like pouring milk over the pizza. And that would probably turn out quite messy! 😀

Hi Jim Thank you for your message. How wonderful as a family to enjoy homemade pizza each week! This is a great little recipe when you need something instant - without waiting for it to melt! Lately I've enjoyed stirring it through gnocchi in a pomodoro sauce and then baking - like Gnocchi Sorrentina. The bocconcini recipe I have is a much softer mozzarella, rather than something you can grate. I'll email you the recipe! 😊 Nadia
